Protein (or not) Mug Cake

I have had a daily craving for cake lately, which does not bode well since I am currently on my mission. Thankfully this mug cake concoction entered my life! It’s delicious, simple and takes care of my cravings without breaking the macro bank. It does take a little prep but lasts awhile.

What you’ll need

One box angel food cake mix
One box cake mix of your choice (I’ve been using the Betty Crocker chocolate fudge mix because it’s been on sale for $1 at my local Wal-Mart)
8 oz container Cool Whip
1/4 cup powdered sugar
1 3.4 oz box pudding mix (I’ve tried vanilla, cheesecake and chocolate with good results)
1 cup milk
Any kind of fruit (strawberries are my fave)
1/2 scoop protein powder (optional)

Step 1 – Prepare

Combine the boxes of cake mix. Combine the two dry mixes well and store in a container.

Next, make your frosting. Mix together the pudding mix, powdered sugar and milk then let it rest for 3 minutes. Then gently fold in the whipped cream. Store this goodness in the refrigerator.

Step 2 – Assemble

Without Protein
Take out 3 tablespoons of the cake mix and place in a coffee mug. Add two tablespoons of water, mix well. Place the mug in your microwave for 30 to 45 seconds. Depending on the size of your mug, you can either leave the cake in or transfer it to a bowl. Add the frosting and fruit then enjoy!

With Protein
*I use Quest Chocolate Milkshake Protein Powder for this recipe. Using protein does not alter the taste for me but does make the cake a little denser.

Take out 3 tablespoons of the cake mix and place in coffee mug. Add the protein powder and 3 tablespoons water. Mix well. Microwave for 45 – 60 seconds. Transfer the cake to a bowl if needed, top with frosting and fruit.
